- Prep the peeled and deveined shrimp by seasoning with salt, pepper, sweet paprika, and garlic powder.
- Heat olive oil and unsalted butter in a large skillet over medium-high heat until shimmering, about 1-2 minutes. Add shrimp and sear for about 1 minute on each side until pink and opaque.
- Lower heat to medium, add minced garlic and diced onion to the skillet. Sauté for about 3 minutes until soft and translucent.
- Pour ¾ of the coconut milk into the skillet and stir. Mix remaining coconut milk with cornstarch until smooth and add to the skillet along with fish sauce, honey, and lime juice. Simmer for about 2 minutes until thickened.
- Return seared shrimp to skillet and gently toss to coat in sauce. Simmer together for 1 minute.
- Taste and adjust seasoning as needed. Serve in bowls topped with chopped cilantro, chili flakes, and a sprinkle of black pepper.
