- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add 1 pound of ground beef, breaking it apart with a spoon. Cook for about 6–8 minutes until the beef is browned and no longer pink. Drain any excess fat and season lightly with salt and pepper.
- Push the beef to one side and add 3 cloves of minced garlic in the empty space. Sauté for about 1 minute until fragrant.
- Sprinkle 1 teaspoon of onion powder and 1 tablespoon of Cajun seasoning over the beef. Stir everything together.
- Toss in 1 cup of uncooked long-grain white rice and pour in 2 cups of beef broth. Stir well to combine and bring to a gentle boil.
- Reduce the heat to low and cover the skillet. Let it simmer for 18–20 minutes, stirring occasionally.
- When the rice is tender and the liquid is absorbed, remove from heat. Fold in 1 cup of shredded cheddar cheese and 1/2 cup of grated Parmesan cheese.
- Adjust seasoning with additional salt and pepper if needed. Serve warm and enjoy!
