  • 2 tbsp Taco Seasoning store-bought or homemade
For the Vegetables
  • 4 cups Cabbage shredded, green or Savoy
  • 1 medium Onion preferably red, diced
  • 1 medium Bell Pepper diced, any color
  • 14.5 oz Diced Tomatoes canned or fresh
For the Topping
  • 2 cups Fritos or use tortilla chips
  • 1 cup Shredded Cheese cheddar or pepper jack
  • 1/2 cup Sour Cream optional

Step-by-Step Instructions
  1. Prepare Ingredients: Wash and chop the cabbage into thin strips, then set aside in a large mixing bowl. Dice the onion and bell pepper.
  2. Cook Meat: In a large skillet, heat the pan over medium heat and add the ground beef. Brown for 6–8 minutes and drain excess fat.
  3. Sauté Vegetables: Add diced onion and bell pepper to the skillet with ground beef and sauté for about 4–5 minutes until softened.
  4. Add Flavorings: Stir in diced tomatoes and taco seasoning. Simmer for about 5 minutes until bubbling and fragrant.
  5. Incorporate Cabbage: Fold in chopped cabbage and cook for an additional 5–7 minutes until it begins to wilt.
  6. Assemble Dish: Remove from heat and layer Fritos on top, followed by shredded cheese. Allow it to rest for a couple of minutes.
  7. Serve: Serve warm, garnishing with sour cream if desired. Enjoy!
