Dough Preparation
- Whisk together 4 cups of all-purpose flour, 2 teaspoons of active dry yeast, and 1 teaspoon of fine sea salt in a large mixing bowl.
- In a separate bowl, mix 1 and ¾ cups of warm water, 3 tablespoons of extra-virgin olive oil, and 1 tablespoon of honey. Stir until honey dissolves, then combine with dry ingredients.
- Stir until a very sticky dough forms, cover with plastic wrap and rest for 30 minutes.
- Transfer to refrigerator for 12 to 48 hours for overnight rise, enhancing flavor.
Baking Instructions
- Preheat oven to 425°F (220°C) and generously oil a 9x13-inch baking pan.
- Transfer cold dough into prepared pan, cover with a towel and let it rise for 30 to 45 minutes.
- Stipple the surface with oiled fingers to create dimples.
- Sprinkle mozzarella cheese, dollop pizza sauce, layer pepperoni, and add optional ricotta.
- Bake for 30 minutes until cheese is bubbly and crust is golden.
- Let cool for 5-10 minutes, slice, and serve.
