  • 3 tablespoons Extra-Virgin Olive Oil essential for flavor

Method
 

Dough Preparation
  1. Whisk together 4 cups of all-purpose flour, 2 teaspoons of active dry yeast, and 1 teaspoon of fine sea salt in a large mixing bowl.
  2. In a separate bowl, mix 1 and ¾ cups of warm water, 3 tablespoons of extra-virgin olive oil, and 1 tablespoon of honey. Stir until honey dissolves, then combine with dry ingredients.
  3. Stir until a very sticky dough forms, cover with plastic wrap and rest for 30 minutes.
  4. Transfer to refrigerator for 12 to 48 hours for overnight rise, enhancing flavor.
Baking Instructions
  1. Preheat oven to 425°F (220°C) and generously oil a 9x13-inch baking pan.
  2. Transfer cold dough into prepared pan, cover with a towel and let it rise for 30 to 45 minutes.
  3. Stipple the surface with oiled fingers to create dimples.
  4. Sprinkle mozzarella cheese, dollop pizza sauce, layer pepperoni, and add optional ricotta.
  5. Bake for 30 minutes until cheese is bubbly and crust is golden.
  6. Let cool for 5-10 minutes, slice, and serve.
