- Prick the large baking potatoes with a fork and microwave on high for 15–20 minutes until tender.
- Preheat your oven to 240°C (gas mark 9) for perfect crispy skin.
- Transfer cooked potatoes to a roasting tin, drizzle with olive oil and sprinkle with sea salt. Roast for 15–20 minutes until skins are crisp.
- In a bowl, mix salad onions, Dijon mustard, Worcestershire sauce, lemon zest, cayenne pepper, and two-thirds of the Gruyère cheese.
- Scoop out potato flesh, leaving a thin layer for structure. Mash the flesh and mix with filling, gently folding in crab meat.
- Stuff the potatoes with the filling and top with remaining Gruyère cheese.
- Bake for an additional 3 minutes until cheese melts and bubbles.
- Serve immediately with a fresh salad of watercress, spinach, and rocket.
