Step-by-Step Instructions
  1. Prick the large baking potatoes with a fork and microwave on high for 15–20 minutes until tender.
  2. Preheat your oven to 240°C (gas mark 9) for perfect crispy skin.
  3. Transfer cooked potatoes to a roasting tin, drizzle with olive oil and sprinkle with sea salt. Roast for 15–20 minutes until skins are crisp.
  4. In a bowl, mix salad onions, Dijon mustard, Worcestershire sauce, lemon zest, cayenne pepper, and two-thirds of the Gruyère cheese.
  5. Scoop out potato flesh, leaving a thin layer for structure. Mash the flesh and mix with filling, gently folding in crab meat.
  6. Stuff the potatoes with the filling and top with remaining Gruyère cheese.
  7. Bake for an additional 3 minutes until cheese melts and bubbles.
  8. Serve immediately with a fresh salad of watercress, spinach, and rocket.
