  • 1 pound Lean Ground Beef or turkey/plant-based meat
  • 1 packet Taco Seasoning use homemade if desired
  • 1/4 cup Water or Beef Broth Broth enhances flavor
For the Fillings
  • 1 cup Refried Beans or black beans for a vegetarian option
  • 1 cup Cooked Mexican Rice instant rice is acceptable
  • 1 cup Warm Cheese Dip or shredded cheese
  • 1 cup Shredded Mexican Cheese Blend use your favorite
  • 1 cup Fritos or Doritos for crunch
For the Tortilla & Toppings
  • 4 pieces Flour Tortillas gluten-free options available
  • 1/2 cup Sour Cream or Greek yogurt
  • 1 cup Salsa homemade for extra flavor

Method
 

Cooking Steps
  1. In a large skillet over medium heat, add a splash of oil and cook the ground beef for 7-10 minutes until browned. Drain fat, add taco seasoning and water or beef broth, and simmer for 3-5 minutes.
  2. Cook Mexican rice according to package instructions (10-15 minutes) or warm pre-cooked rice in a saucepan or microwave.
  3. Heat nacho cheese sauce over low heat, stirring for 3-5 minutes until smooth and creamy.
  4. Warm refried beans in the microwave or on the stove for 2-3 minutes until creamy.
  5. On a warmed tortilla, layer refried beans, seasoned beef, Mexican rice, cheese sauce, and shredded cheese. Top with Fritos and sour cream.
  6. Carefully fold the tortilla sides inward and roll tightly from the bottom.
  7. Optional: Toast in a hot skillet seam-side down for 3-4 minutes each side until golden and crispy.
