Cooking Steps
- In a large skillet over medium heat, add a splash of oil and cook the ground beef for 7-10 minutes until browned. Drain fat, add taco seasoning and water or beef broth, and simmer for 3-5 minutes.
- Cook Mexican rice according to package instructions (10-15 minutes) or warm pre-cooked rice in a saucepan or microwave.
- Heat nacho cheese sauce over low heat, stirring for 3-5 minutes until smooth and creamy.
- Warm refried beans in the microwave or on the stove for 2-3 minutes until creamy.
- On a warmed tortilla, layer refried beans, seasoned beef, Mexican rice, cheese sauce, and shredded cheese. Top with Fritos and sour cream.
- Carefully fold the tortilla sides inward and roll tightly from the bottom.
- Optional: Toast in a hot skillet seam-side down for 3-4 minutes each side until golden and crispy.
