Preparation Steps
- Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the old-fashioned rolled oats, chopped walnuts, ground cinnamon, ground nutmeg, and salt.
- Peel, core, and cube the red apple into ¼ inch pieces, and add them to the dry mixture.
- Pour the melted coconut oil, real maple syrup (or honey), and pure vanilla extract over the oat mixture and stir until well-coated.
- Transfer the granola mixture onto the prepared baking sheet, spreading it out evenly and pressing down firmly.
- Bake in the preheated oven for 22–28 minutes, stirring halfway through.
- Once baked, remove from the oven and cool on the baking sheet for at least 20 minutes.
- After cooling, break into clusters and store in an airtight container.
