Method
 

Preparation Steps
  1. Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the old-fashioned rolled oats, chopped walnuts, ground cinnamon, ground nutmeg, and salt.
  3. Peel, core, and cube the red apple into ¼ inch pieces, and add them to the dry mixture.
  4. Pour the melted coconut oil, real maple syrup (or honey), and pure vanilla extract over the oat mixture and stir until well-coated.
  5. Transfer the granola mixture onto the prepared baking sheet, spreading it out evenly and pressing down firmly.
  6. Bake in the preheated oven for 22–28 minutes, stirring halfway through.
  7. Once baked, remove from the oven and cool on the baking sheet for at least 20 minutes.
  8. After cooling, break into clusters and store in an airtight container.
