Ingredients
  

For the Dough
  • 1 cup Milk Can substitute with almond or soy milk.
  • 2 tablespoons Active Dry Yeast Use double the amount of fresh yeast for best results.
  • 3 cups Bread Flour Can use all-purpose flour but may require less liquid.
  • 2 tablespoons Sugar
  • 1 teaspoon Salt
  • 3 tablespoons Unsalted Butter Softened, can substitute with oil.
  • 1 large Egg Vegan alternatives not tested.
For the Filling
  • 1 cup Unsweetened Shredded Coconut Opt for dry desiccated coconut.
  • 2 tablespoons Melted Butter
  • 2 tablespoons Dry Milk Powder Can substitute with extra shredded coconut.
  • 4 tablespoons Sugar
  • 2 tablespoons All-Purpose Flour
  • 1 pinch Salt
For the Topping
  • 1 large Egg For egg wash.
  • 1 splash Cream or Milk For egg wash.
  • 2 tablespoons All-Purpose Flour For topping mix.
  • Water To form a smooth paste for topping.
  • Toasted Sesame Seeds Optional garnish.

Method
 

Dough Preparation
  1. Warm 1 cup of milk, stir in 2 tablespoons of sugar and 2 teaspoons of active dry yeast. Let sit for 5-10 minutes.
  2. In a bowl, mix 3 cups of bread flour and 1 teaspoon of salt. Add yeast mixture, 3 tablespoons of butter, and 1 beaten egg. Mix until shaggy.
  3. Knead the dough on a floured surface for 15-20 minutes until smooth and elastic.
  4. Shape into a ball, place in a greased bowl, cover, and let rise in warm place for about 1 hour.
Filling and Shaping
  1. Combine filling ingredients and mix until crumbly.
  2. Once dough rises, punch it down and divide into 12-16 pieces. Shape each into an oval and fill with about 1 tablespoon of filling.
  3. Seal edges and place buns seam-side down on a lined tray. Cover and let rise for 30-40 minutes.
Baking
  1. Prepare topping and pipe onto each bun. Whisk egg and milk for egg wash and brush over buns.
  2. Bake at 350°F for about 20 minutes or until golden brown.
  3. Let cool on a wire rack before serving.
