Ingredients

For the Herb Blend
  • 2 tablespoons Dried Parsley Flakes Can substitute with fresh parsley (dry in the oven first)
  • 2 tablespoons Dried Thyme Leaves Fresh thyme can also be used (just dry it before incorporating)
  • 2 tablespoons Dried Sage Leaves Use fresh sage if available and ensure it’s dried properly
For the Main Flavor
  • 1 cup Powdered Dried Wild Mushrooms Try varieties like porcini, ground until fine
For the Seasoning Base
  • 1 cup Kosher Salt Feel free to substitute with table salt (reduce quantity by half)
  • 2 tablespoons Granulated Onion Powder Fresh onion can be used if prepared correctly (ensure it’s powdered)
  • 2 tablespoons Granulated Garlic Powder Fresh garlic may be used (just dehydrate and grind for powder)

Equipment

  • oven
  • baking sheet
  • high-speed blender
  • Fine Mesh Strainer
  • Large mixing bowl
  • airtight container

Method

Step-by-Step Instructions
  1. Preheat your oven to 175°F (80°C). Wash and thoroughly dry fresh parsley, thyme, and sage. Arrange the herbs in a single layer on a baking sheet and bake for approximately 1 hour, or until the herbs are completely dry.
  2. Once the herbs have cooled, place your dried wild mushrooms in a high-speed blender. Blend on high until they turn into a fine powder. Sift the powder through a fine mesh strainer to eliminate any large bits.
  3. In a large mixing bowl, add the dried herb crumble, mushroom powder, kosher salt, granulated onion powder, and granulated garlic powder. Stir until the mixture is well combined.
  4. Transfer your freshly made Wild Mushroom Seasoning Salt into an airtight container, ensuring it’s sealed tightly. Store it in a cool, dry place, away from direct sunlight.
