  • 4 large Eggs at room temperature
  • 2 cups Sugar can substitute with brown sugar
  • 1 cup Vegetable Oil or melted butter
  • 1 cup Canned Pumpkin pure pumpkin, not pie filling
  • 2 cups All-Purpose Flour sifted
  • 2 teaspoons Baking Powder ensure it's fresh
  • 1 teaspoon Cinnamon or pumpkin pie spice
  • 1 teaspoon Baking Soda
  • 0.5 teaspoon Salt
For the Cream Cheese Icing
  • 8 ounces Cream Cheese softened
  • 0.5 cup Butter softened
  • 4 cups Powdered Sugar sifted
  • 1 teaspoon Vanilla Extract pure extract recommended

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9x13-inch baking pan by greasing it.
  2. In a large mixing bowl, mix together 4 eggs, 2 cups sugar, 1 cup vegetable oil, and 1 cup canned pumpkin on medium speed for 1.5 minutes.
  3. In a separate bowl, whisk together 2 cups all-purpose flour, 2 teaspoons baking powder, 1 teaspoon cinnamon, 1 teaspoon baking soda, and 1/2 teaspoon salt.
  4. Gradually add the dry mixture to the wet mixture, mixing on low speed until just combined.
  5. Pour the batter into the greased baking pan and spread evenly. Bake for approximately 30 minutes or until a toothpick comes out clean.
  6. Let the bars cool completely in the pan on a wire rack before frosting.
  7. To make the icing, beat together 8 ounces cream cheese and 1/2 cup butter until smooth, then gradually add 4 cups powdered sugar and 1 teaspoon vanilla.
  8. Frost the cooled pumpkin bars with the cream cheese icing and serve.
