Ingredients
  

For the Chicken
  • 1 pound Boneless Skinless Chicken Breasts or thighs for richer flavor
  • 3 tablespoons Low-Sodium Soy Sauce regular is a saltier alternative
  • 1 cup Cold Water for marinating
  • 2 tablespoons Cornstarch can substitute with arrowroot powder
  • 2 tablespoons Vegetable Oil any neutral oil like canola works
For the Sauce
  • 2 tablespoons Oyster Sauce use mushroom stir-fry sauce for vegans
  • 2 tablespoons Rice Vinegar apple cider vinegar as alternative
  • 2 tablespoons Shaoxing Wine or dry sherry/white wine in pinch
  • 1 tablespoon Honey or maple syrup for vegan option
  • 1 tablespoon Ginger fresh grated or ground ginger
  • 2 cloves Garlic minced; garlic powder if unavailable
  • 1 tablespoon Chili Paste or Sambal Oelek adjust to spice level preference
For the Veggies
  • 2 cups Broccoli Florets substitutions include snap peas or green beans
  • 1 large Yellow Onion or shallots for a milder flavor
  • 2 stalks Celery or substitute with bell pepper
  • 1 medium Red Bell Pepper any color bell pepper is fine
  • 1 medium Carrot use baby carrots for convenience

Method
 

Preparation
  1. Marinate the Chicken by combining chicken breasts with soy sauce and cold water. Let sit for about 10 minutes.
  2. Velvet the Chicken by adding cornstarch and vegetable oil, tossing to coat, and letting it rest for 20 minutes.
  3. Prepare the Sauce by whisking together oyster sauce, rice vinegar, Shaoxing wine, honey, ginger, garlic, and chili paste.
Cooking
  1. Cook the Chicken in a skillet over medium-high heat with vegetable oil for about 5-7 minutes until golden brown.
  2. Stir-Fry the Vegetables, adding broccoli and cooking for 1-2 minutes. Add onion, celery, bell pepper, and carrot, and stir-fry for another 2-3 minutes.
  3. Combine and Thicken the Sauce by pouring it over the vegetables, stirring to mix, and simmering for 2-3 minutes.
  4. Final Assembly includes adding cooked chicken back into the skillet, tossing with the veggies, and heating through for a minute.
