Method
 

Making Hot Cross Buns
  1. Mix dry ingredients: In a large mixing bowl, combine the dry ingredients and whisk until evenly distributed.
  2. Combine wet ingredients: In a separate bowl, mix the wet ingredients together until smooth.
  3. Dough preparation: Pour wet mixture into the dry and mix to form a shaggy dough. Knead for 5-7 minutes until smooth.
  4. First rise: Shape dough into a ball, place in a greased bowl, cover, and let rise until doubled, about 1-2 hours.
  5. Shape buns: Gently deflate dough, divide into 12 pieces, shape into balls, and place on baking sheet.
  6. Second rise: Cover buns and let rise for 40 minutes until puffed.
  7. Preheat oven: Preheat your oven to 375°F (190°C). Prepare glaze ingredients if using.
  8. Bake buns: Bake buns for 20 minutes until golden and hollow when tapped.
