Cooking Steps
- Heat olive oil in a large skillet over medium heat until shimmering.
- Sauté diced onions in the skillet for about 5 minutes until translucent and slightly golden.
- Add minced garlic and cook for 1 minute until fragrant.
- Stir in roasted red peppers, vegetable broth, smoked paprika, dried oregano, salt, and pepper. Simmer for 10 minutes.
- Blend the sauce until smooth using an immersion blender.
- Place cod fillets in the skillet, spoon sauce over each and cover. Cook for 8-10 minutes until the cod flakes easily.
