For the Sauce
  • 2 tablespoons Olive oil A rich base for sautéing
  • 1 medium Onion Diced
  • 2 cloves Garlic Minced
  • 2 cups Roasted red peppers Fresh red bell peppers can be substituted
  • 1 cup Vegetable broth Chicken broth works as well
  • 1 teaspoon Smoked paprika Use regular paprika if necessary
  • 1 teaspoon Dried oregano Fresh oregano offers a more vibrant flavor
  • to taste Salt
  • to taste Pepper
For the Cod
  • 4 fillets Cod Tilapia or haddock can be used as substitutes
For Garnishing
  • 2 tablespoons Fresh parsley Chopped

Method
 

Cooking Steps
  1. Heat olive oil in a large skillet over medium heat until shimmering.
  2. Sauté diced onions in the skillet for about 5 minutes until translucent and slightly golden.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Stir in roasted red peppers, vegetable broth, smoked paprika, dried oregano, salt, and pepper. Simmer for 10 minutes.
  5. Blend the sauce until smooth using an immersion blender.
  6. Place cod fillets in the skillet, spoon sauce over each and cover. Cook for 8-10 minutes until the cod flakes easily.
  7. Remove from heat and garnish with fresh parsley. Serve immediately.
