Ingredients

  • 2 pieces Chicken Breasts Boneless, skinless for best results
  • 2 tablespoons Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Paprika
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
For the Creamy Mixture
  • 1 cup Ranch Dressing
  • 1/2 cup Sour Cream
For the Fresh Toppings
  • 2 pieces Avocados Mix with lime juice to keep fresh
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Shredded Mozzarella Cheese
  • 4 pieces Flour Tortillas
  • 2 cups Shredded Lettuce
  • 1 cup Tomatoes Diced
  • 1/4 cup Cilantro Chopped
  • 1 tablespoon Lime Juice Keeps avocados from browning

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Drizzle olive oil over the chicken breasts and rub it in to coat thoroughly. Season the chicken with garlic powder, onion powder, paprika, cumin, salt, and black pepper.
  3. Place the seasoned chicken on a baking sheet lined with parchment paper and bake for 20 to 25 minutes or until the internal temperature reaches 165°F (74°C).
  4. While the chicken is baking, prepare the creamy filling by mashing the avocados in a bowl, mixing in lime juice. In another bowl, combine ranch dressing and sour cream until smooth.
  5. Once the chicken has cooled enough to handle, shred it into bite-sized pieces.
  6. Warm the flour tortillas briefly in a dry skillet over medium heat, about 30 seconds on each side.
  7. Assemble the burritos by spreading a layer of the ranch mixture on each tortilla. Add shredded chicken, avocado mixture, cheeses, lettuce, tomatoes, and cilantro.
  8. Roll the burritos tightly and crisp the edges in a skillet over medium heat for 1-2 minutes per side if desired.
  9. Serve warm and enjoy!
