- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium mixing bowl, combine rolled oats, chopped walnuts, and Medjool dates. Add ground cardamom, ground cinnamon, and salt, mixing them together well.
- Melt the coconut oil and pour it into the bowl along with maple syrup, stirring until the dry ingredients are evenly coated.
- Spread the mixture evenly onto the prepared baking sheet and bake for 22 minutes, stirring halfway through.
- After baking, allow the granola to cool completely on the baking sheet.
- Transfer the cooled granola to an airtight container for storage.
