  • 1/4 teaspoon Salt Balances sweetness.
Binding and Sweetening
  • 1/4 cup Coconut Oil Substitute with a neutral oil if desired.
  • 1/3 cup Maple Syrup Consider date syrup for a different flavor.

Method
 

Steps
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium mixing bowl, combine rolled oats, chopped walnuts, and Medjool dates. Add ground cardamom, ground cinnamon, and salt, mixing them together well.
  3. Melt the coconut oil and pour it into the bowl along with maple syrup, stirring until the dry ingredients are evenly coated.
  4. Spread the mixture evenly onto the prepared baking sheet and bake for 22 minutes, stirring halfway through.
  5. After baking, allow the granola to cool completely on the baking sheet.
  6. Transfer the cooled granola to an airtight container for storage.
