- Preheat the oven to 325°F (160°C) and grease a pie plate. Line with pie crust and freeze while preparing filling.
- In a mixing bowl, combine brown sugar, flour, oats, and ½ tsp of cinnamon. Mix in diced butter until resembling coarse crumbs.
- Peel, core, and slice apples into thin wedges. Soak in a lemon-infused water mixture for 10 minutes to prevent browning.
- In a skillet, melt 3 tbsp of butter, add apples, ¼ cup sugar, and ¼ tsp cinnamon. Sauté for about 10 minutes until tender.
- In a mixing bowl, whisk ¾ cup sugar, cornstarch, salt, eggs, buttermilk, and vanilla until smooth.
- Layer the cooked apples in the pie crust, pour custard over them, and sprinkle crumble topping evenly.
- Cover pie with foil and bake for 30 minutes, then remove foil and bake for another 25-30 minutes until firm.
- Allow pie to cool for at least 30 minutes before serving warm or at room temperature.
