- Line a sheet pan with parchment paper.
- In a food processor, blend the Vanilla Oreos until fine crumbs are formed.
- Add softened cream cheese to the Oreo crumbs and mix until fully combined.
- Shape the mixture into 1.5-tablespoon sized balls and place on the prepared baking sheet.
- Melt the white chocolate melts in a microwave-safe bowl in short bursts, stirring in between.
- If desired, add a few drops of red food coloring to the melted chocolate.
- Dip each truffle into the melted chocolate using a fork, tapping off excess.
- Chill dipped truffles for about 10 minutes, then add sprinkles while chocolate is still wet.
- Allow the truffles to set at room temperature for at least 2 hours.
