Step-by-Step Instructions
  1. Prepare the Filling: Beat the cream cheese with powdered sugar and cornstarch until smooth, about 2-3 minutes. Form dollops on parchment paper and freeze for 30-45 minutes.
  2. Make the Dough: Cream butter and sugar for 3-4 minutes. Add egg and vanilla, mixing well. In another bowl, whisk flour, freeze-dried strawberry powder, baking soda, and salt. Gradually combine dry and wet mixtures, folding in dried strawberry chunks.
  3. Assemble Cookies: Preheat oven to 350°F (175°C). Flatten 1.5 tbsp of dough in your palm, place a frozen filling dollop in the center, and encase it. Roll in sparkling sugar and chill in the fridge for 20 minutes.
