Ingredients

For the Brownie Base
  • 200 grams Dark Chocolate 50-60% cocoa recommended
  • 100 grams Butter
  • 200 grams Sugar
  • 100 grams All-Purpose Flour
  • 2 large Eggs
For the Cheesecake Layer
  • 200 grams Cream Cheese
  • 150 grams Pistachio Spread Recommended: Pisti
  • 1 teaspoon Vanilla Extract
  • 100 grams Caster Sugar
  • 1 large Egg

Equipment

  • Medium saucepan
  • Large mixing bowl
  • Hand Mixer
  • 8x8-inch baking dish

Method

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). In a medium saucepan, melt the dark chocolate and butter over low heat, stirring until smooth, about 5-7 minutes.
  2. In a large mixing bowl, combine the melted chocolate mixture with sugar and eggs, whisking until blended. Fold in flour until just combined.
  3. In a separate bowl, beat the cream cheese until smooth. Gradually add caster sugar, then egg and vanilla, mixing just until combined.
  4. Prepare an 8x8-inch baking dish by lining with parchment paper. Pour brownie batter into the dish, then dollop cheesecake filling on top and gently swirl.
  5. Bake for 25-30 minutes until edges are set but the center remains slightly soft. Allow to cool in the pan for 15-20 minutes.
  6. Lift brownies out using parchment paper and slice into squares. Enjoy!

Cool brownies for at least 15-20 minutes before slicing to prevent a runny center. Use high-quality chocolate for best results.
