Step‑by‑Step Instructions
  1. Preheat your oven to 325°F (160°C).
  2. In a medium mixing bowl, combine graham cracker crumbs, cocoa powder, brown sugar, and melted butter. Press this mixture into the bottom of a 9-inch springform pan and bake for 10 minutes. Set aside to cool.
  3. In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar, mixing until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing on low speed after each addition until just combined.
  5. Slowly pour in the brewed coffee and optional coffee liqueur, gently folding until combined.

  7. Bake for 55-60 minutes until the edges are set and the center jiggles slightly. Cool in the oven with the door cracked for about an hour.
