  • 1 teaspoon Paprika Smoked paprika for a bolder twist.

For the Plantains
  • 3 Ripe Plantains Look for yellow with black spots.
For the Garnish
  • 2 tablespoons Fresh Cilantro (Chopped) Optional for garnish.

Step-By-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Peel the ripe plantains and slice them diagonally into 1-inch thick pieces.
  3. In a mixing bowl, whisk together olive oil, fresh lime juice, minced garlic, cumin, paprika, salt, and pepper.
  4. Add the sliced plantains to the bowl with the marinade and toss until thoroughly coated.
  5. Spread the marinated plantain slices in a single layer on the baking sheet.
  6. Roast the plantains for 20-25 minutes, flipping halfway through for even browning.
  7. Once roasted, remove from the oven and garnish with chopped cilantro before serving.
