Step-by-Step Instructions
  1. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing for about 5 minutes until translucent.
  2. Transfer the sautéed onions and garlic to the crockpot. Add chicken breast, tomato sauce, dried basil, dried oregano, salt, and pepper, stirring to combine.
  3. Pour in chicken broth and mix gently. Set slow cooker to low heat and cook for about 4 hours.
  4. 20 minutes before serving, add pasta and fresh spinach or kale to the soup, stirring to combine.
  5. Once chicken is cooked through, remove it from the crockpot and shred it. Stir the shredded chicken back into the soup.
  6. Ladle soup into bowls and garnish with grated Parmesan cheese before serving.
