  • 1/2 cup Parmesan Cheese Grated
  • 1 large Egg Beaten
  • 2 cloves Garlic Minced
  • 1 teaspoon Dried Oregano
  • 1/2 teaspoon Black Pepper
  • 1/4 teaspoon Red Pepper Flakes Optional
For Baking
  • 2 tablespoons Cooking Spray/Olive Oil

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Grate the zucchini and place it in a bowl. Sprinkle salt over it and let it sit for about 10 minutes.
  3. After 10 minutes, squeeze out excess moisture from the grated zucchini using a kitchen towel.
  4. Combine the drained zucchini with breadcrumbs, feta, Parmesan, egg, garlic, oregano, black pepper, and optional red pepper flakes. Mix well.
  5. Shape the mixture into small tots or patties, about 1 to 2 inches in size, and arrange them on the baking sheet.
  6. Lightly spray or drizzle olive oil over the tops of the tots for a crispy finish.
  7. Bake for 20-25 minutes, flipping halfway through, until golden brown.
  8. Remove from the oven and let cool slightly before serving warm.
