- Combine the drained zucchini with breadcrumbs, feta, Parmesan, egg, garlic, oregano, black pepper, and optional red pepper flakes. Mix well.
- Shape the mixture into small tots or patties, about 1 to 2 inches in size, and arrange them on the baking sheet.
- Lightly spray or drizzle olive oil over the tops of the tots for a crispy finish.
- Bake for 20-25 minutes, flipping halfway through, until golden brown.
- Remove from the oven and let cool slightly before serving warm.
