- Prepare the fries by cooking them according to your preferred method—bake, air fry, or deep fry—until golden brown and crispy, about 20-25 minutes at 425°F.
- In a medium bowl, whisk together the olive oil, lemon zest and juice, garlic powder, dried oregano, dried parsley, and seasonings until smooth. Cover and chill for at least 30 minutes.
- Spread the cooked waffle fries evenly on a baking sheet. Sprinkle mozzarella and half of the feta over the fries. Broil on low for about 5 minutes until cheese is melted and bubbly.
- Drizzle the chilled sauce over the fries and top with remaining feta cheese. Serve immediately.
