  • 14 ounces Artichoke Hearts drained and chopped
  • 10 ounces Frozen Chopped Spinach thawed and drained
  • 1 cup Mayonnaise or Greek yogurt
  • 1 cup Sour Cream or Greek yogurt
  • 2 cups Mozzarella Cheese shredded
  • 1/2 cup Parmesan Cheese grated
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Salt
  • 2 tablespoons Olive Oil for greasing
  • 1 cup Breadcrumbs Panko preferred
  • 2 tablespoons Butter melted
For the Topping
  • 1 cup Breadcrumbs Panko preferred
  • 2 tablespoons Butter melted

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and gather all ingredients.
  2. In a large mixing bowl, combine cooked chicken, artichoke hearts, and thawed spinach.
  3. Stir in mayonnaise, sour cream, mozzarella, Parmesan, garlic powder, onion powder, black pepper, and salt until creamy.
  4. Grease a 9x13 inch baking dish with olive oil.
  5. Spread the chicken mixture evenly in the greased baking dish.
  6. Mix melted butter with breadcrumbs, then sprinkle over the casserole.
  7. Add remaining mozzarella and Parmesan cheese on top.
  8. Cover with foil and bake for 20 minutes, then uncover and bake for an additional 10-15 minutes.
  9. Let cool a few minutes before slicing and serving.
