Step-by-Step Instructions
  1. In a large pot, combine 2 cups of water, 2 cups of milk, and 1 teaspoon of salt. Place over medium-high heat until boiling.
  2. Once boiling, reduce heat to low and whisk in 1 cup of yellow corn polenta, stirring continuously.
  3. Allow to simmer on low for 25-30 minutes, whisking frequently until thickened.
  4. Turn off the heat and stir in 3 tablespoons of unsalted butter and ⅔ cup of shredded Parmesan cheese until melted.
  5. Season with black pepper and garnish with fresh thyme before serving.
