Cooking Steps
- In a large pot over medium heat, pour in 1-2 tablespoons of olive oil. Add the Italian sausage and cook for about 5-7 minutes, breaking it into smaller pieces until browned.
- Add diced onion, minced garlic, chopped carrots, and celery to the pot. Sauté for around 5 minutes until softened.
- Stir in dried oregano, basil, and red pepper flakes, cooking for another minute to release the flavors.
- Pour in chicken broth and diced tomatoes, raising the heat to bring the mixture to a gentle boil.
- Once boiling, add ditalini pasta and reduce to medium simmer. Cook according to package instructions for about 8-10 minutes.
- Reduce heat to low and add heavy cream and grated Parmesan cheese. Stir continuously until melted and creamy.
- Taste and season with salt and pepper, then serve hot, garnished with fresh parsley.
