Cooking Steps
  1. In a large pot over medium heat, pour in 1-2 tablespoons of olive oil. Add the Italian sausage and cook for about 5-7 minutes, breaking it into smaller pieces until browned.
  2. Add diced onion, minced garlic, chopped carrots, and celery to the pot. Sauté for around 5 minutes until softened.
  3. Stir in dried oregano, basil, and red pepper flakes, cooking for another minute to release the flavors.
  4. Pour in chicken broth and diced tomatoes, raising the heat to bring the mixture to a gentle boil.
  5. Once boiling, add ditalini pasta and reduce to medium simmer. Cook according to package instructions for about 8-10 minutes.
  6. Reduce heat to low and add heavy cream and grated Parmesan cheese. Stir continuously until melted and creamy.
  7. Taste and season with salt and pepper, then serve hot, garnished with fresh parsley.
