  • 3 cups elbow macaroni can substitute with rotini or small shells
  • 1 can black beans rinsed
  • 1 cup sweet corn thawed if frozen
  • 1 large red bell pepper diced
  • 1 large green bell pepper diced
  • ½ cup red onion finely chopped
  • 1 cup shredded cheddar cheese can substitute with non-dairy cheese
  • ½ cup fresh cilantro optional
For the Dressing
  • 1 cup mayonnaise or dairy-free mayo
  • 1 cup sour cream or dairy-free sour cream
  • 1 large lime juice freshly squeezed
  • 1 tablespoon taco seasoning adjust to taste
  • salt to taste
  • black pepper to taste

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a rolling boil. Add elbow macaroni and cook for about 8-10 minutes, until al dente. Drain and rinse under cold water.
  2. In a medium bowl, combine mayonnaise, sour cream, lime juice, taco seasoning, salt, and pepper. Whisk until smooth.
  3. In a large bowl, add cooled macaroni, black beans, sweet corn, diced bell peppers, red onion, and cheddar cheese. If using cilantro, add it now. Mix gently.
  4. Pour the dressing over the salad and fold gently until evenly coated.
  5. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
  6. Before serving, stir gently, adjust seasonings, and serve chilled.
