- Preheat your oven to 375°F (190°C) and prepare a 9x9-inch baking dish.
- In a large mixing bowl, combine ground beef, breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, salt, and pepper. Mix gently.
- Spread the meat mixture evenly in the prepared baking dish and bake uncovered for 20-25 minutes.
- Prepare the mashed potatoes by mixing warm potatoes with sour cream and butter until creamy. Season to taste.
- Remove the meatloaf from the oven and spread the mashed potatoes evenly over the top.
- Sprinkle cheddar cheese on top and return to the oven to bake for an additional 10-15 minutes until cheese is melted.
- Let the dish rest for 5-10 minutes before slicing and serving with fresh parsley if desired.
