For the Mashed Potatoes
  • 3 cups Mashed Potatoes Use fresh or leftover potatoes.
  • 1/4 cup Sour Cream Can be swapped with cream cheese.
  • 2 tbsp Butter Adds richness.
  • 1 1/2 cups Shredded Cheddar Cheese Use sharp cheddar for robust flavor.
  • to taste Fresh Parsley Optional garnish.

Method
 

Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a 9x9-inch baking dish.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, salt, and pepper. Mix gently.
  3. Spread the meat mixture evenly in the prepared baking dish and bake uncovered for 20-25 minutes.
  4. Prepare the mashed potatoes by mixing warm potatoes with sour cream and butter until creamy. Season to taste.
  5. Remove the meatloaf from the oven and spread the mashed potatoes evenly over the top.
  6. Sprinkle cheddar cheese on top and return to the oven to bake for an additional 10-15 minutes until cheese is melted.
  7. Let the dish rest for 5-10 minutes before slicing and serving with fresh parsley if desired.
