Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and coat a 3-quart casserole dish with nonstick cooking spray.
  2. Dice the chicken breast into bite-sized pieces. Heat oil in a skillet over medium heat, then add chicken and cook for 6-8 minutes until golden brown. Sprinkle with taco seasoning and mix well.
  3. Cook the instant rice according to package instructions, about 5 minutes. In a mixing bowl, combine cooked rice with queso, half and half, green chiles, and onion. Mix until creamy.
  4. Pour the rice mixture into the prepared casserole dish. Top with cooked chicken pieces, then sprinkle with shredded cheese.
