Step‑by‑Step Instructions for Cheesy Rice
  1. Rinse 1 cup of long grain white rice in a fine mesh sieve under cold water until the water runs clear, then set the sieve aside to drain completely.
  2. In a medium saucepan over medium heat, melt 3 tablespoons of unsalted butter. Add ½ small diced onion and sauté for about 3-4 minutes until translucent.
  3. Add the rinsed rice to the saucepan with the sautéed onions. Pour in 8 ounces of chicken broth and 8 ounces of whole milk, then sprinkle in ½ teaspoon of paprika, ¼ teaspoon of salt, and ¼ teaspoon of pepper. Stir until well combined.
  4. Bring the mixture to a gentle simmer over medium heat. Cover the saucepan with a lid and reduce the heat to low, simmering for 18-20 minutes.
