Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 5-6 minutes until tender but not mushy. Drain thoroughly.
  2. In a medium saucepan, melt 3 tablespoons of butter over medium heat. Gradually whisk in 3 tablespoons of flour for about 1 minute to cook.
  3. Slowly pour in 2 cups of warmed milk while whisking constantly to avoid lumps. Cook for 4-5 minutes until thickened.
  4. Remove from heat and stir in 1 tablespoon of Dijon mustard, salt, pepper, and nutmeg. Fold in the cheddar and Parmesan until melted and smooth.
  5. Preheat oven to 400°F (200°C). In a greased baking dish, arrange cauliflower and pour cheese sauce over top. Sprinkle with ½ cup cheddar.
  6. Bake for 20-25 minutes until golden brown. Broil for 2-3 minutes for extra crunch, watching closely.
  7. Allow to cool slightly before serving. Garnish with thyme or parsley if desired.
