Method
 

Step‑by‑Step Instructions
  1. Cut the fresh dragon fruit in half and scoop out the flesh. Blend until smooth.
  2. Juice 2-3 fresh lemons and aim for about ½ cup of lemon juice.
  3. Combine ½ cup of erythritol with ½ cup of water in a saucepan and heat until dissolved.
  4. In a pitcher, mix the dragon fruit puree, lemon juice, and simple syrup. Add cold water and stir.
  5. Serve over ice and garnish with slices of lemon and pieces of dragon fruit.
