Cook the Jasmine Rice
- Rinse 1 cup of jasmine rice under cold water. Combine with 1 ½ cups of water and a pinch of salt. Bring to boil, then simmer for 15-20 minutes until fluffy.
Sauté the Aromatics
- Heat 2 tablespoons of oil in a skillet. Add 1 finely chopped onion and cook until translucent, about 3-4 minutes.
Add Garlic and Ginger
- Add 3 minced garlic cloves and 1 tablespoon of freshly grated ginger. Sauté for 1-2 minutes until fragrant.
Incorporate the Curry Powder
- Sprinkle in 2 tablespoons of curry powder and cook for an additional minute.
Create the Coconut Sauce
- Pour in 1 can of coconut milk and the juice of 1 lime. Stir until smooth, then season with salt and pepper. Bring to a gentle simmer.
Cook the White Fish
- Gently add white fish fillets to the simmering sauce. Cover and cook for 5-7 minutes until opaque.
Serve and Garnish
- Serve over jasmine rice, garnish with lime zest and fresh cilantro.
