Ingredients
  

For the Fish
  • 1 pound White Fish Fillets Use cod or tilapia
  • 1 can Coconut Milk 14 oz
  • 1 tablespoon Lime Juice Freshly squeezed
  • 1 tablespoon Lime Zest Always fresh
For the Rice
  • 1 cup Jasmine Rice Basmati rice is a fine alternative
For the Curry Base
  • 2 tablespoons Oil Olive or coconut oil
  • 1 medium Onion Finely chopped
  • 3 cloves Garlic Minced
  • 1 tablespoon Ginger Freshly grated
  • 2 tablespoons Curry Powder Adjust heat level as needed
  • to taste Salt
  • to taste Pepper
  • 1/4 cup Fresh Cilantro For garnish

Method
 

Cook the Jasmine Rice
  1. Rinse 1 cup of jasmine rice under cold water. Combine with 1 ½ cups of water and a pinch of salt. Bring to boil, then simmer for 15-20 minutes until fluffy.
Sauté the Aromatics
  1. Heat 2 tablespoons of oil in a skillet. Add 1 finely chopped onion and cook until translucent, about 3-4 minutes.
Add Garlic and Ginger
  1. Add 3 minced garlic cloves and 1 tablespoon of freshly grated ginger. Sauté for 1-2 minutes until fragrant.
Incorporate the Curry Powder
  1. Sprinkle in 2 tablespoons of curry powder and cook for an additional minute.
Create the Coconut Sauce
  1. Pour in 1 can of coconut milk and the juice of 1 lime. Stir until smooth, then season with salt and pepper. Bring to a gentle simmer.
Cook the White Fish
  1. Gently add white fish fillets to the simmering sauce. Cover and cook for 5-7 minutes until opaque.
Serve and Garnish
  1. Serve over jasmine rice, garnish with lime zest and fresh cilantro.
