- Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper or grease it thoroughly.
- In a large mixing bowl, cream together the unsalted butter, granulated sugar, and brown sugar for 2-3 minutes until fluffy.
- Add one large egg and 1 teaspoon of vanilla extract to the creamed mixture and mix until smooth.
- Gradually add in the all-purpose flour, baking soda, salt, and ½ teaspoon of ground cinnamon. Mix just until combined.
- Transfer the dough into the prepared baking pan, pressing it evenly into the bottom.
- In a small bowl, mix together ⅓ cup of brown sugar, 1 teaspoon of ground cinnamon, and 2 tablespoons of melted butter. Drizzle over the pressed dough and swirl gently.
- Bake for 22-26 minutes until the edges are golden brown and a toothpick comes out clean.
- Allow the bars to cool completely on a wire rack.
- In a separate bowl, beat together cream cheese and softened butter, then gradually add powdered sugar and ½ teaspoon of vanilla extract, mixing until fluffy.
- Spread the cream cheese frosting on top of the cooled bars and allow it to set before slicing.
