- Preheat your oven to 375°F (190°C).
- Lightly grease a 9x13-inch baking dish with olive oil.
- In a large mixing bowl, combine the cooked rice, shredded chicken, salsa, corn, black beans, half of the cheddar cheese, and all the spices. Mix thoroughly.
- Spread the combined mixture evenly in the prepared baking dish.
- Sprinkle the remaining cheddar cheese over the top of the mixture.
- Cover the baking dish with aluminum foil and bake for 25 minutes.
- After 25 minutes, remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
- Allow to cool for about 5 minutes before serving.
