  • 2 cups cheddar cheese or use Monterey Jack or pepper jack
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon olive oil for greasing the baking dish
Optional Toppings
  • 1/4 cup fresh cilantro for garnish
  • 1 cup sour cream or Greek yogurt for serving

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a 9x13-inch baking dish with olive oil.
  3. In a large mixing bowl, combine the cooked rice, shredded chicken, salsa, corn, black beans, half of the cheddar cheese, and all the spices. Mix thoroughly.
  4. Spread the combined mixture evenly in the prepared baking dish.
  5. Sprinkle the remaining cheddar cheese over the top of the mixture.
  6. Cover the baking dish with aluminum foil and bake for 25 minutes.
  7. After 25 minutes, remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  8. Allow to cool for about 5 minutes before serving.
