- Preheat your oven to 375°F (190°C). Peel and cube the potatoes, then boil in a large pot until fork-tender, about 15-20 minutes. Drain and cool slightly.
- In a mixing bowl, combine drained potatoes with Cheddar cheese, sour cream, butter, and desired seasonings. Mix gently until well incorporated.
- Lightly grease a 9x13-inch baking dish and pour in the potato mixture, spreading evenly.
- Sprinkle panko breadcrumbs evenly over the top of the potato mixture. Optionally add a dash of paprika.
- Bake in the preheated oven for 25-30 minutes until golden brown and bubbly.
- Remove from the oven and allow to cool for 5-10 minutes before serving.
