Honey-Balsamic Dressing

Method
 

Preparation
  1. Wash the mixed salad greens thoroughly under cold water and dry them using a salad spinner. Place in a large serving bowl.
  2. Rinse the fresh blueberries and let them drain. Roughly chop the shelled pistachios and sprinkle over the mixed greens.
  3. Crumble the feta cheese over the salad ingredients.
  4. Thinly slice the red onion and add to the salad.
  5. In a small mixing bowl, whisk together olive oil, honey, balsamic vinegar, Dijon mustard, salt, and black pepper until emulsified.
  6. Drizzle the dressing over the salad and gently toss to coat.
  7. Taste the salad for seasoning and adjust if necessary. Serve immediately.
