Preparation
- Wash the mixed salad greens thoroughly under cold water and dry them using a salad spinner. Place in a large serving bowl.
- Rinse the fresh blueberries and let them drain. Roughly chop the shelled pistachios and sprinkle over the mixed greens.
- Crumble the feta cheese over the salad ingredients.
- Thinly slice the red onion and add to the salad.
- In a small mixing bowl, whisk together olive oil, honey, balsamic vinegar, Dijon mustard, salt, and black pepper until emulsified.
- Drizzle the dressing over the salad and gently toss to coat.
