- In a medium saucepan, combine blackberries, water, lemon juice, and sugar. Cook over medium heat for 20-30 minutes until thickened and jam-like.
- Thaw puff pastry for 20-25 minutes and roll out to 1/8 inch thick on a lightly floured surface.
- Spread half of the cooled blackberry jam on one half of the pastry, crumble goat cheese over it, and sprinkle with lemon zest. Fold and cut into 12 strips.
- Gently twist each strip and place on a parchment-lined baking sheet, ensuring space between them.
- Preheat oven to 400°F (200°C). Brush twists with whisked egg and sprinkle the sugar-thyme mixture on top. Bake for 16-18 minutes until golden.
