Step-by-Step Instructions
  1. In a medium saucepan, combine blackberries, water, lemon juice, and sugar. Cook over medium heat for 20-30 minutes until thickened and jam-like.
  2. Thaw puff pastry for 20-25 minutes and roll out to 1/8 inch thick on a lightly floured surface.
  3. Spread half of the cooled blackberry jam on one half of the pastry, crumble goat cheese over it, and sprinkle with lemon zest. Fold and cut into 12 strips.
  4. Gently twist each strip and place on a parchment-lined baking sheet, ensuring space between them.
  5. Preheat oven to 400°F (200°C). Brush twists with whisked egg and sprinkle the sugar-thyme mixture on top. Bake for 16-18 minutes until golden.
  6. Cool the twists on a wire rack for about 5 minutes before serving warm.
