- Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish with butter or non-stick spray.
- If using, sauté diced onion and bell pepper in oil over medium heat for about 3-4 minutes until softened. Remove and let cool.
- In a mixing bowl, whisk together the eggs, milk, salt, black pepper, and garlic powder until just combined.
- Spread the diced ham in the baking dish, then add half the cheddar cheese. If using, layer in the sautéed vegetables followed by the remaining cheese.
- Pour the egg mixture over the fillings, level it out, and bake for 25-30 minutes until set and golden brown.
- Allow the omelette to rest for 5 minutes, slice, and garnish with chopped herbs before serving.
