Step-By-Step Instructions
  1. Preheat your oven to 375°F (190°C). Gather your ingredients and prep the vegetables.
  2. In a large skillet, heat olive oil over medium heat. Add chopped bell peppers, diced onions, and minced garlic, sauté for 5-7 minutes.
  3. Stir in the spinach and sauté for another 2-3 minutes until wilted. Remove from heat and cool slightly.
  4. Combine sautéed vegetables with cream cheese, cheddar cheese, and beaten eggs in a mixing bowl until smooth.
  5. Grease a 9x13 inch casserole dish and pour the vegetable and cheese mixture into it, spreading evenly.
  6. Bake in the preheated oven for 30-35 minutes until golden brown on top and firm. A knife inserted should come out clean.
  7. Remove from oven and let cool for 5-10 minutes before serving. Garnish with fresh herbs if desired.
