- Preheat your oven to 375°F (190°C). Gather your ingredients and prep the vegetables.
- In a large skillet, heat olive oil over medium heat. Add chopped bell peppers, diced onions, and minced garlic, sauté for 5-7 minutes.
- Stir in the spinach and sauté for another 2-3 minutes until wilted. Remove from heat and cool slightly.
- Combine sautéed vegetables with cream cheese, cheddar cheese, and beaten eggs in a mixing bowl until smooth.
- Grease a 9x13 inch casserole dish and pour the vegetable and cheese mixture into it, spreading evenly.
