- Preheat your oven to 425°F (220°C).
- Lay out your thawed puff pastry on a parchment-lined baking sheet and position the brie in the center.
- Spread fig preserves over the scored surface of the brie and drizzle honey on top, then sprinkle with thyme leaves and black pepper.
- Wrap the prosciutto around the brie, then fold the corners of the puff pastry over the cheese.
- Beat the egg and apply an egg wash to the puff pastry. Lightly sprinkle coarse sugar on top.
- Bake for 20 to 25 minutes or until the pastry is golden brown and puffed up.
- Let cool for a few minutes before serving with warm slices of baguette, crackers, or fresh fruits.
