- Preheat your oven to 400°F (200°C). Prepare a baking sheet lined with parchment paper.
- Roll out puffed pastry sheets to about ¼ inch thick. Cut into a square large enough to wrap around the Brie.
- Place the wheel of Brie in the center of the puffed pastry, drizzle honey, sprinkle chopped figs, and add prosciutto.
- Gently fold the corners of the pastry over the Brie, overlapping and pinching seams to seal.
- Beat an egg and brush over the surface of the wrapped pastry. Sprinkle with sea salt.
- Bake for 20-25 minutes until golden brown and puffed up.
- Let the pastry rest for about 10 minutes before serving.
